Our Heather Honey is gathered from the wild ling heather (Calluna vulgaris) that carpets Derryoober Bog, a rare and protected landscape where the bees find their richest nectar source. This heather only flowers for a short few weeks each year, making the honey a precious, seasonal harvest. Using time-honoured methods—pressing the honeycomb with a hand press—we preserve its rich, jelly-like texture and depth of flavour, true to tradition.

Tasting Notes:

Exceptionally thick and jelly-like texture, with a unique thixotropic quality—it firms when still, but flows when stirred.
